Consorzio per la Tutela della Formaggella del Luinese D.O.P.

The Consortium for the Protection of Formaggella del Luinese P.D.O. was created with the aim of grouping and protecting companies that contribute to the creation of this unique product and has the task of safeguarding, promoting and supervising its proper marketing. These companies, included in the controlled supply chain, are organized in small craft businesses that, with their work, ensure the protection of marginal areas, keeping the mountain active and fertile with niche productions.

The Formaggella del Luinese P.D.O. is the first cheese in Italy made with 100% raw goat milk to have reached the protected designation of origin, produced exclusively in the territory that includes the four mountain communities of the Province of Varese and some hilly municipalities, from the border with Switzerland to the natural limit of Lake Varese. The P.D.O. recognition guarantees that the cheese is obtained according to the precise rules established by the production specification approved by the Ministry of Agricultural, Food and Forestry Policies. the processing, maturing and selection of the forms must take place within the approved territory and in accordance with the indications provided for them from 2011, the year in which Formaggella was recognised in the European Community register as a Protected Designation of Origin product. The production chain is strictly controlled by an official certifying body recognized by MIPAAF that guarantees compliance with all the prescribed requirements.

Historically used in the gastronomy of the northern territory of the province of Varesina, Formaggella is marketed in whole forms bearing the logo imprinted on the heel.
