The culinary tradition of Verbano always emphasizes its fish that freely flock to the nets of fishermen: such as perch, fish symbol of the lake, served in exquisite fillets or made the protagonist of magnificent risotto, and bleaks, fried or in carpione, but also the rarest pike and the sublime lake trout, carp, whitefish, char and the whitefish in carpione, served cold as required by the ancient recipe.
